Part of our sustainable farming practice is growing our own meat. Each winter we butcher one of our own animals, and share the meat with our family and friends. We use the entire animal. The head and horns are cleaned down and taken by an artisan in Kuranda QLD. Bones are rendered for tallow and hides are tanned. Tanning is done in Ballarat - the last remaining tannery in Australia - supporting traditional skills and workers.
This hide is from an Scottish Highland steer. It is the largest one we have. Dimensions are 2.2wide by 2.4long.
